Intense New Mexico Green Chile Stew

Ingredients

The Chile Base

  • 3 to 4 cups roasted Hatch green chiles, peeled, seeded, and coarsely chopped (Use X-Hot or Hot varieties like Barker/Sandia; add 1–2 diced fresh jalapenos or serranos if you want extra fire).

The Meat & Stew

  • 2.5 lbs pork shoulder (pork butt), trimmed and cut into $\frac{1}{2}$-inch bite-sized cubes
  • 2 tbsp lard, bacon fat, or oil
  • 1 large yellow onion, finely diced
  • 6 cloves garlic, minced
  • 2 tbsp all-purpose flour (optional, for thickening)
  • 4 to 5 cups low-sodium chicken broth
  • 1.5 lbs Yukon Gold or Red potatoes, diced into $\frac{1}{2}$-inch pieces
  • 1 tsp Mexican oregano, crumbled
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • Salt and coarsely ground black pepper, to taste

Instructions

  1. Sear the Pork:Heat lard or oil in a heavy Dutch oven over high heat. Season the diced pork heavily with salt and pepper. Working in batches, brown the meat deeply on all sides. Transfer browned pork to a plate and keep the rendered fat in the pot.
  2. Sauté the Aromatics:Lower heat to medium. Add the diced onion and sauté for 6–8 minutes until translucent and slightly browned. Add the minced garlic, cumin, and Mexican oregano, cooking for another 60 seconds until fragrant.
  3. Make the Brown Roux (Optional):Sprinkle the flour over the onions and stir continuously for 2 minutes to cook out the raw flour taste and build body for the broth.
  4. Combine & Deglaze:Pour in 1 cup of chicken broth to deglaze the pan, scraping up all the savory browned bits (fond) on the bottom. Stir in the remaining broth, browned pork (with any resting juices), and the roasted green chiles.
  5. Simmer the Stew:Bring the pot to a boil, then drop the heat to low. Cover and simmer gently for 45–60 minutes, or until the pork becomes tender.
  6. Add Potatoes & Finish:Stir in the diced potatoes. Cover and cook for an additional 20–25 minutes until the potatoes are tender when pierced with a fork.
  7. Adjust & Serve:Taste for salt, pepper, and heat. For an even more intense green chile kick, stir in an extra handful of freshly chopped roasted chiles right before serving.

Pro Tips for Peak Intensity

  • Chile Heat: Traditional New Mexico stew doesn’t use tomatoes or heavy tomatoes/tomatillos—the green chile flavor is the star. If your chiles aren’t spicy enough, avoid adding vinegar; instead, blend a couple raw hot chiles directly into a bit of broth and stir it in.
  • Make Ahead: Green chile stew tastes even hotter and deeper the next day after the heat permeates the pork and potatoes.
  • Serving: Enjoy piping hot in a bowl with warm flour tortillas or poured directly over a smothered breakfast burrito.
